Irish Cheeses

I looked in the Cheese Primer for Irish cheeses and was a bit disappointed. I was hoping to find a recommendation for a good cheddar, but none were included. Please let me know if you have a recommendation for a good Irish cheddar.

Here are the cheeses recommended in the book:

• Cashel Blue (County Tipperary)
• Coolea (County Cork)
• Croghan (County Wexford)
• Gubbeen (County Cork)
• Milleens (County Cork)

I hope to try a few of these when we are in Ireland next week. Please let me know if you've had them and if you would recommend them.
